Broccoli And Stilton Soup Recipe



Warming up with a bowl of homemade soup is the perfect way to cosy up on a winter day, and this easy Broccoli and Stilton Soup recipe is no exception! My primary goal with starting this food blog was to share with you comforting dishes that will make your kitchen feel like home, and this one definitely hits the brief.


This delicious soup combines the nutty, slightly sweet flavour of broccoli with the sharp, tangy taste of stilton cheese, resulting in a satisfying bowl of comfort food that's both healthy and hearty! Best of all, it's quick and simple to make - all you need is a handful of ingredients and about 30 minutes of time!


You will need:

  • 1 broccoli, roughly chopped

  • 1 onion, roughly diced

  • 3 cloves of garlic, minced

  • 4 cups of bone or vegetable broth

  • 1 cup of double cream

  • 200g of stilton cheese, crumbled

  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat a bit of olive oil over medium heat. Add the onion and garlic, and cook until the onion is translucent (about 5 minutes).

  2. Add the chopped broccoli to the pot and continue cooking for another 5 minutes.

  3. Pour in the bone or vegetable broth and bring the mixture to a boil. Reduce heat to low and let the soup simmer for 15-20 minutes, or until the broccoli is tender.

  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth.

  5. Stir in the cream and crumbled stilton cheese, and continue heating over low heat until the cheese is melted and well-combined with the soup.

  6. Season with salt and pepper to taste.


And that's it! This easy Broccoli and Stilton Soup is now ready to be served. Ladle into bowls and garnish with a bit of extra stilton cheese, or perhaps a sprinkle of croutons or chopped fresh herbs - I particularly enjoy parsley, dill, or mint with this recipe. This soup is perfect for lunch or dinner, and makes a fantastic addition to dinner table.
